      Shredded Duck Salad

Ingredients
2 tbsps red wine vinegar
2 tbsps sugar
2 tbsps sesame oil
2 tbsps soy sauce
1 tsp prepared mustard
½ tsp salt
1 cup shredded carrot
1 cup peeled and shredded cucumber
1 cup shredded cabbage or Chinese cabbage (bok choy)
 
1 lb. roast duck or chicken meat, shredded

Instructions
Combine the vinegar, sugar, sesame seed oil, soy sauce, mustard and salt in a bowl; mix thoroughly. Arrange the vegetables on a serving plate. Put the shredded duck or chicken on top. Pour over the dressing just before serving.
