4 C of day old rice or cool at least 4 hrs

1/2 C vegetable oil
|
|
6 garlic cloves
|
|
1/2 a medium onion sliced
|
|
1 C of basil leaves
|
|
2 jalapenos, sliced width wise
|
|
3 T oyster sauce
|
|
2 T fish sauce
|
|
1 t. sugar
|
|
|
|
1 lb. chicken, diced
|
|
Soy sauce (optional)
|

|
|
|
|
|
|
|

Instructions |
|
|
Whisk together the oyster sauce, fish sauce, and
sugar in a small bowl and set off to the side.
|
|
|
Preheat your skillet and oil over medium high
heat. Add the onions, jalapenos, and garlic and
cook until softened, about one minute.
|
|
|
Stir in the chicken and the sauce and continue
cooking until the chicken is no longer pink.
|
|
|
Stir in basil and then the rice, stirring well so
that he basil wilts and the rice is completely
coated and warmed
|
