     Irish Pork Roast

Category   Entrees - Maindishes
Sub Category   None

Ingredients
2 pounds of pork tenderloin
1 stick of butter, solid, sliced
2 tablespoons of softened butter
3 tablespoons of apple cider or apple wine
2 large cooking apples, chopped
salt and pepper to taste

Instructions
Butterfly pork tenderloin until it is on large flat piece.
Spread chopped apples and solid butter evenly over meat. Roll meat up and tie closed.
Rub softened butter and salt and pepper on outside and place in a 3 quart cooking dish. All the juices from apples will be added to the cider, so make sure it is deep enough for that. Pour cider in bottom of pan.
Cover loosely with foil and bake at 350 for 1 hour, or 250 for 3 hours.
