     Crunchy Coconut Chicken

2 eggs
1 cup unsweetened shredded coconut
1/2 cup panko crumbs
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds boneless chicken breasts
1/2 cup butter (melted)
1/2 cup chili sauce or apricot jam
1/2 teaspoon garlic powder

Lightly beat egg in a medium bowl. In another bowl, mix together coconut, panko crumbs, garlic powder, salt, and pepper.
Place chicken between two pieces of plastic wrap and flatten with a kitchen mallet.
Dredge chicken in beaten egg and then coat with coconut mixture. Repeat with remaining chicken.
Drizzle chicken with melted butter and then bake 30-40 minutes at 400 degrees.
Serving Suggestions
Serve with chili sauce or apricot jam.
