     Vegetarian Quesadillas with Scrambled Eggs

Ingredients
2 eggs
1 cup spinach roughly chopped
1/4 cup cooked black beans
1 medium whole grain tortilla
1/2 cup Fat free melted shredded cheese
1 tablespoon fresh lime juice
2 tablespoons finely chopped white onion or radishes
3 packed tablespoons cilantro(1 handful)
1 small garlic clove, minced
 
1/4 teaspoon ground coriander
1/4 teaspoon sea salt

Instructions
Add eggs, 1-2 minutes on medium then add the spinach, stirring often Add the black beans to the skillet. Pour in the scrambled eggs and cook, stirring often, until the eggs are set for 1-3 minutes Transfer the mixture to a bowl to pause the cooking process To cook the Quesadilla warm the tortilla over medium heat flipping sometimes once the tortilla is warm sprinkle 1/4 cup FF cheese Add the eggs onto of the cheese Then add 1/4 cheese to the top of the scrambled eggs Save a little so when you carefully flip the quesadilla you have more cheese and let it melt
