     Tortilioni all' Amatriciana

Ingredients
400g-450g Tortilioni (cooked al dente)
100g Arrosto (bacon), guanciale or pancetta
1/2 cup white wine
2 tblspoons olive oil
1 medium onion chopped
Mixed herbs
2 tblspoons tomatoes paste
250 g polpa di pomodoro
1/2 teaspoon cinnamon (optional)
 
1/2 teaspoon nutmeg (optional)
Salt and pepper
1 teaspoon sugar
70g Pecorino Romano grattugiato cheese

Instructions
Method- sauce Chopp the onion and the bacon. Put the bacon and olive oil in a pan and saute' till golden brown. Add the onion, and cook till it is soft. Add the polpa, wine, herbs, sugar, tomatoes paste, salt and pepper. Leave to simmer for some time. Meanwhile boil pasta (al dente). When everything is ready drain pasta, add the sauce and cheese and mix everything together. Bon Appe'tit--)
