     PALEO SEAFOOD CHOWDER

Ingredients
One quart Seafood Stock
1 tablespoon olive oil
One half cup white wine
3 ears of corn (corn removed)
3 strips of bacon diced
1 yellow onion chopped
2 large carrots chopped
3 celery stalks chopped
1 cup coconut milk
 
2 heaping tablespoons Old Bays Seasoning
salt and pepper to taste
one teaspons fresh thyme
Seafood......I buy whats fresh a whole foods I always
buy shrimp frozen raw and deveined. usually a pound of
mussells or clams whichever are fresher. If lobster tails
are on sale grab 2. You can also add crab meat!

Instructions
Saute Olive oil add onion, cook 5 minutes until translucent. Now add the bacon until crispy and carmelized. Add white wine let it cook off a bit. Then into the pot with the following...Corn, carrots,celery,1 qt seafood broth (start with 2 cups and add as needed, 1 cup coconut milk, old bays seasoning salt and pepper fresh thyme
Let all these slow cook in your pot for about 25 minutes. The flavors should come together you might need to add more Old Bays
Seafood... Everything goes in the pool make sure the shrimp are peeled, wash outside of mussells or clams.. put the lobster in shell and all. This will only need to cook 5 to 7 minutes. Fish will turn from pink to white and it is done. Pull out lobster take it from the shell chopp it up and add it back in ! Super good!
