Ingredients
3 large egg(s)
1 cup Musselman's Apple Sauce
3 cup McNeil Nutritionals SPLENDA No Calorie Sweetener
• 4 cup zucchini
• 4 tsp vanilla extract
• 1 tsp table salt
• 1 tsp ground nutmeg
• 3 cup all-purpose flour
• 6 tsp ground cinnamon
 
• 1 1/2 tsp baking powder

Instructions
Preheat Oven to 325 degrees F. Spray muffin pans with FF cooking spray. In a large bowl, beat eggs until light and frothy. Mix in applesauce and Splenda. Stir in zucchini and vanilla. Combine flour, cinnamon, nutmeg, baking powder, and salt; stir into the egg mixture. Divide batter into prepared pans. (spooning 1 heaping tbs of batter into each muffin tin yields about 32). Bake for about 15 minutes or until done.
