     Potato Pancakes

Ingredients
4 large potatoes
1 yellow onion
1 egg, beaten
1 tsp. salt
2 to 4 tbs. all purpose flour
pepper to taste
2 C vegetable oil
 

Instructions
Finely grate potatoes and onion into large bowl. Drain off excess liquid. Squeeze out as much liquid as possible. Mix in egg, salt and pepper. Add enough flour to thicken mixture.
Heat oil in heavy skillet over medium heat. Drop three 1/4 cup mounds into hot oil and flatten to make 1/2 inch thick pancakes. Fry, turning once until golden brown. Transfer to paper towel lined plate to drain. Repeat until all mixture is used. Keep warm in 200 degree oven until ready to serve.
