In a food processor, add the cashews, cheese and garlic. Pulse
gently so the ingredients are mixed but the cashews remain
chunky. set aside in a small bowl.
In the food processor, add the olive oil and lemon juice forst, then
add arugula and pulse to blend well.
Mix arugula mixture into cashew mixture and season with salt and
pepper.
Serve with cut vegetables or on crostini type crackers.
