     White Chocolate Blueberry Bread Pudding

Ingredients
1/2 cup heavy cream
2 cups white chocolate chips
5 eggs
1/2 cup whole milk
1 cup granulated sugar
1/2 tsp salt
1 tsp vanilla extract
splash of amaretto (optional)
1 loaf of day old bread, cut into cubes
 
1 package blueberries
1 tbsp soft butter

Instructions
Preheat oven to 350 degrees. Grease an 8x11 or 5x10 baking dish and set aside. Place stale bread cubes in oven at 300 for 20 minutes to absorb moisture but make sure it doesn't toast or burn. Heat heavy cream in saucepan over medium-high heat. Stir occasionally so it does not burn and heat until almost boiling. Pour 1 cup white chocolate chips in a bowl and pour hot cream over them and let sit for one minute. Stir until chocolate completely dissolves. Combine this mixture with eggs, sugar, whole milk, salt, vanilla, and amaretto. Whisk until completely blended. Add bread cubes to mixture, making sure every piece is completely coated. Soak for 15 minutes, stirring every few minutes. Add in the blueberries and an extra half cup of chocolate chips and mix. Pour into baking dish and spread a thick layer of soft butter over the top. Bake for 50 to 60 minutes or until golden brown.
