     Russian Teacakes (Nut balls)

Ingredients
1 cup softened butter
1/2 cup icing sugar
1 teaspoon vanilla essence
2 1/4 cup flour (I used farina di grano tenero)
1/4 teaspoon salt
3/4 cup roasted nuts finely chopped or put them in Liquidizer, but not ground (I used almonds)
1/2 cup icing sugar for rolling
 

Instructions
Mix butter, sugar and vanilla. Add flour, salt and nuts to the mixture and form a dough. If the dough is still sticky add some more flour. Take a piece from the dough and form it into 1 inch ball, until you finish all the dough. Grease a baking dish and bake on 200c for 12-15 minutes or until set but not brown. While still warm roll them in icing sugar, and when cool roll them again. Enjoy --)
