Toss mushrooms in olive oil and cook on 400 for 20 minutes.
Heat butter in skillet and add onion. Cook for 5 minutes. Add
garlic, thyme, and leeks and cook for a minutes. Add flour and
cook for 2 minutes. Turn off heat and add wine to the pan.
Dump skillet ingredients and mushrooms into crockpot and add
cheese and chicken broth. Cook over low heat for about 4
hours. Add salt and pepper to taste.
Add cream and puree the mixture.
