     Crispy Hash Skillet

Ingredients
1/2 Potato
2 Veggie Bacon Strips
2 TBS Bell Pepper
1/4 TSP Salt & Pepper
1 Egg
1 Slice Smoked Provolone
1 TSP Butter
1/4 TSP Parsley
 

Instructions
Shred potatoes using larger holes of box grater. Wrap in kitchen towel and squeeze dry. Transfer potatoes onto plated lined with 2 layers of paper towels. Microwave for 2 minutes.
Place bacon in pan and cook as directed. Chop up once slightly cooled. Preheat oven to 400 degrees.
Turn stove heat to medium. Add butter to pan. Add potatoes and mix with spatula. Let cook for 2 minutes. Add chopped pepper, salt, and pepper. Stir around twice then flatten everything out. Cook for 3 minutes, stir, and cook for 2 minutes. Stir in bacon and cook for 2 minutes.
Remove skillet from heat and flatten. Then, using a spoon, make 1 shallow indentation in middle of hash. Crack egg into it. Top with cheese. Transfer skillet to over and bake about 10 minutes. Top with parsley.
