     Roasted Garlic, Apple & Chicken Burger

Ingredients
½ lb. lean ground chicken
½ apple, shredded
¼ c. onion, finely chopped
½ head garlic, roasted
½ tsp. thyme
¼ tsp. salt
1/2 cup Roasted Garlic & Lemon Dressing
6 c. mixed greens
1 green apple, sliced
 
4 oz. goat cheese, soft chevre
Roasted Garlic & Lemon Dressing
4 heads of garlic roasted
½ c. olive oil
juice of one lemon
¼ c. champagne vinegar
½ c. water
½ tsp. salt, ¼ tsp. pepper
1 Tbsp. honey

Instructions
Roasted Garlic & Lemon Dressing- Blend all of the ingredients until creamy and smooth. Store refrigerated for up to 2 weeks.
2. In a medium bowl, mix the chicken, apple, onion, garlic, thyme and salt just until combined and form into 4 patties. In a skillet over medium-high heat, cook each patty for 3-4 minutes on each side until cooked through and no longer pink in the center.
3. Meanwhile, toss the mixed greens with the dressing and divide among 6 plates. Top each salad with apple slices, a burger and goat cheese. Serve immediately.
