1 48 ounces of chicken broth – I use College Hill Light & Fat Free 50% Less Sodium
1 can of original Rotel
1 14.5 ounce can of stewed tomatoes
Juice from ½ of a lemon
1 tsp. salt
2 tsp. Mrs. Dash – Original Blend
1 can of corn
1 can of diced water chestnuts
Instructions
Put everything in a large pot and stir well. Bring to a boil. Then simmer for about an hour, stirring every 10-15 minutes or so. There won’t be much broth but it’ll be super flavorful.

I like to top with Ranch flavored croutons and grated parmesan cheese, although it’s great plain, too.
