     Spicey Peanut Noodles

Ingredients
1/4 cup smooth peanut butter
3 T water
3 T soy sauce
1/4 cup tahini
2 T peanut oil
2 T sesame oil
1/3 cup rice wine vinegar
2 T dry sherry
3 T honey
 
2 tsp. chopped garlic
2 tsp. peeled and grated fresh ginger
1/3 tsp. fresh pepper flakes
kosher salt
3/4 pound Chinese Wheat noodles
1 T peanut oil
1/4 cup green onions chopped
1/4 cup chopped roasted peanuts

Instructions
1. To make the peanut dressing, put the peanut butter in a bowl and using a whisk add the rest of the dressing ingredients (through the kosher salt) in the order listed. 2. Bring a large pot of salted water to boil. Cook the noodles, stirring occasionally until soft, about 4-5 minutes. Drain in a colander and rinse under cold running water. Drain well. Toss noodles in peanut oil to prevent them from sticking together until ready to serve. Chill noodles and dressing (separately). When ready to serve, toss noodles with dressing and top with onions and peanut.
