1. To make the peanut dressing, put the peanut butter in a bowl and using a whisk add the rest of the dressing ingredients (through the kosher salt) in the order listed.
2. Bring a large pot of salted water to boil. Cook the noodles, stirring occasionally until soft, about 4-5 minutes. Drain in a colander and rinse under cold running water. Drain well. Toss noodles in peanut oil to prevent them from sticking together until ready to serve. Chill noodles and dressing (separately).
When ready to serve, toss noodles with dressing and top with onions and peanut.
