     Lasagne Soup

Ingredients
yellow onion - 1 lg - 2 cups
1 - 2 lbs ground beef
4 cloves garlic chopped
4 cups chicken or beef broth
15 oz can diced tomatoes
15 oz can crushed tomatoes
2 1/2 T tomato paste
1 3/4 teas dried basil
3/4 teas dried oregano
 
1/2 teas dried rosemary crushed
1/2 teas dried thyme
1 teas sugar
1 1/2 T chopped fresh parsley
8 lasagne noodles broken to bite size pieces
shredded parm cheese
shredded mozz cheese
ricotta cheese

Instructions
Saute' onion. Add ground beef and brown. Add all remaining ingredients except noodles and cheeses. Cover and simmer at least 20 minutes. Cook noodles in salted water until half done, about 5 minutes. Drain..reserving 1 cup pasta water. Add pasta to sauce. Add 1/2 to 1 cup of pasta water. Let simmer until pasta is cooked.
Serve in bowls topped with cheeses as desired.
