     Fettucine Alfredo

Ingredients
8 oz. gluten free pasta (corn or rice)
1 lb. boneless chicken breast, cooked & diced
1 (8 oz.) cream cheese (low-fat)
1 cup gluten-free chicken broth or water
5 oz. frozen spinach (optional)
1 cup parmesan cheese
2 gloves garlic, minced
 

Instructions
If the chicken is not already cooked, you can boil it in water to make your own chicken broth.
Cook pasta as directed on package.
In a large pan, heat cream cheese and chicken broth until cream cheese is melted. Add parmesan cheese, garlic, salt and pepper to taste. Add chicken and spinach and stir well. Serve sauce over pasta.
