Method- Pastry
Mix flour and butter in a bowl till it looks
like bread crumbs, add sugar and the grated
rind. Whisk eggs and add it to the mixture. Add
the vanilla essence and complete stirring ,
some times you have to mix a little milk to
form a stiff paste.Turn dough on to a floured
board and leave it for half hour aside.

Method- Filling
Whisk egg, ricotta , vanilla, caster sugar and
2-3 tblspoon of the cherries jam filling,but
not the cherries for now. Add the cream slowly,
whisking continually. Roll out pastry and, cut
in rounds and line 12 patty tins and a flan
ring.Then, pour the mixture onto the flan case
and onto the patty tins. Don't fill up till the
end. Bake. on 200c for 35-40minutes or until
risen and firm. Cover loosely with foil to
avoid the top catching while baking. Meanwhile
, put the cherry filling in a pan, add some
warm water, so the jam comes a little runny
,not too much! Leave aside, to cool. When the
cheesecake and the cupcakes are ready, leave to
cool and chill for about 45-60minutes. When
ready to serve put the cherries with their
melted jam filling on top , the chocolate
scales and the icing sugar . Enjoy and finish
Valentine's supper night in with this delicious
