Rinse monkfish and remove outer membrane till firm white meat is exposed. Cut fish into 8 oz portions and then butterfly to 1 inch thickness and 1/3 inch deep cross scores.
Prepare marinade- add all ingredients together and stir until sugar dissolves.
Place fish in a container large enough that portions can be laid flat. Pour marinade over fish and let sit for 1 hour, turning fish after 1/2 hour.
On top shelf of oven broil fish for 5 to 8 minutes on each side and serve. Should be 130 to 140 degrees center.
