     Dip- Cucumber-Feta

Ingredients
1 c. plain Greek yogurt
1/2 c. light sour cream
1/2 c. crumbled feta cheese
1/4 c. finely chopped red onion
1 T. lemon juice
1/2 tsp. salt
2 c. coarsely shredded English cucumber
Pomegranate seeds
Fresh mint leaves
 

Instructions
In medium bowl, combine yogurt, sour cream, feta, onion, lemon juice and salt.
Chill, covered, for 2-8 hours.
Before serving, place shredded cucumber in fine-mesh sieve. Use back of large spoon or rubber spatula to press on cucumber to remove excess liquid.
Stir cuke into yogurt mixture. Garnish with pomegranate seeds and mint, if desired.
