Ingredients
a. 1 tablespoon peanut oil
a. 2 cloves garlic crushed
a. 1/2 onion
b. tablespoon ginger
b. 1 to 1.5 teaspoons crushed red pepper
b. salt and pepper
b. 2.5 cups vegetable stock
b. 1 and 1/2 of a sweet potato (peeled and cut into small chunks)
b. 1/2 can stewed tomatoes, with the liquid
 
c. 5 leaves or so collard greens, chopped
c. 1/2 cup chunky peanut butter

Instructions
Heat the oil and add onion and garlic to cook for about 5 minutes. Add b mixture and heat to a boil. Reduce to low and cook for about 15 minutes with lid partially covering pot.
Add c and and partially covering pot. cook for about 20 minutes, stirring every once and a while
