12 large radishes, sliced very thin or grated/shredded
1/2 red onion, grated
2 - 3 medium sized beets, peeled and very thinly sliced orgrated and beet greens cleaned and chopped
zest and juice of one small orange
zest and juice of one small lemon
2T rice or champagne vinegar
1T maple syrup
2 tsp. sea salt
1T favorite fresh herbs, minced
1 tsp. freshly ground black pepper
extra virgin olive oil or avocado oil to drizzle
Instructions
In medium mixing bowl, combine radishes, red onion
and beets with zest and juice from citrus,
vinegar, maple syrup, salt and pepper. Toss well
and allow to sit, tossing every 15 minutes for 45
min.
Chop reserved beet greens and add to radish
mixture along with fresh minced herbs. Toss to
distribute. Drizzle with olive or avocado oil to
taste and serve room temperature or refrigerate,
covered and serve chilled.
