     Mini Ginger Chicken Burgers with Lime Mayo

Ingredients
10 mini parbaked panini or ciabatta rolls
12-14 oz. trimmed chicken breast fillets
2 Cloves garlic, chopped
1 tsp peeled, finely chopped ginger
1 1/2 Tsp yellow curry powder
2 green onions, roughly chopped
1/4 fresh coriander leaves
1 Tbsp oil (peanut, safflower, etc.)
microgreens, as needed
 
1/2 cup mayonnaise
2 Tsp grated lime rind
2 Tbsp lime juice

Instructions
Bake off rolls and slice when cooled.
Process chicken and combine with curry ginger garlic, onion and coriander. Form approximately 1 heaping Tbsp patties and flatten slightly to fit rolls.
Heat oil in a large frying pan and cook thoroughly, approximately 3-4 minutes per side or until lightly browned.
Combine lime rind, juice, and mayonnaise in a bowl. Use half for the base rolls, top with greens and patties, and use remaining mayonnaise on roll tops. Serve immediately.
