Process chicken and combine with curry ginger garlic, onion and coriander. Form approximately 1 heaping Tbsp patties and flatten slightly to fit rolls.
Heat oil in a large frying pan and cook thoroughly, approximately 3-4 minutes per side or until lightly browned.
Combine lime rind, juice, and mayonnaise in a bowl. Use half for the base rolls, top with greens and patties, and use remaining mayonnaise on roll tops. Serve immediately.
