     Cranberry-Walnut Biscotti

Ingredients
1 sugar
1/2 butter, softened
2 eggs
1/2 tsp almond extrat
2 1/2 flour
1 1/2 dried cranberries( I use the cherry infused raisins)
3/4 chopped walnuts
1/2 tsp salt
1 tsp baking powder
 

Instructions
Cream together butter, sugar, eggs and extract. Add the dry ingredients and mix until well combined.
Shape into a long log and place on baking sheet covered with parchment paper.Flatten log slightly to a thickness of about an inch.
Bake in a 350 degree preheated oven for 35 minutes until very slight browning occurs. Cool completely! Slice into 1/2 in thick slices. At this point if you want a crisper cookie you may return to the oven for 10 more minutes.
For a more festive look you an drizzle cookies with white or dark melted chocolate.
