     Carrot Pineapple Cake

Ingredients
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons ground cinnamon
1/4 teaspoon salt
1 cup white sugar
1 cup brown sugar
1 cup canola oil
4 eggs
 
1 can (8oz.) crushed unsweetened pineapple drained
2 cups shredded carrots
1 cup walnuts / pecans
1 cup coconut
1 teaspoon vanilla
1 1/2 cups confectionary sugar
2 packages (8oz. each) cream cheese softened
1/4 cup butter, softened
1 teaspoon vanilla. / 11/2cups icing sugar

Instructions
Preheat oven 350F and grease and flour 9X13 pan or springform pan. Mix flour, baking soda, baking powder, cinnamon and salt. Make a well in the center and add oil, sugar, eggs, vanilla. Mix with wooden spoon until smooth, stir in carrots, pineapple, coconut and 3/4 cup of nuts.
Pour into pan. Bake at 350 oven for 45 minutes. Don't panic the centre may sink abut, let cool.
To bake e frosting crem together butter and cream cheese until smooth. Add vanilla and the icing sugar until creamy. If using spring form use some of the icing on sides and sprinkle the nuts and sprinkle top as well.
