     Fruit Baked Oatmeal

Ingredients
2 cups oats
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
1/3 cup brown sugar, packed
2 cups milk
2 eggs
1/2 tbsp. vanilla
3 tbsp. honey
 
1 1/2 tbsp. butter, melted
2 cups fruit of choice
1/4 cup pecans, separated

Instructions
Preheat oven to 375 degrees. Mix all dry ingredients together in a small bowl. Whisk all wet ingredients together in a separate bowl. In baking dish layer 1/2 of the fruit and 1/2 of the pecans. Pour dry ingredient mixture over top of fruit. Evenly pour wet mixture on top of oats. Place remaining fruit and pecan on top. Bake for 15-20 minutes or until liquid is absorbed.
