8 C mixed salad greens … any kind, but romaine is nice
2 C total of cucumbers, red, yellow and green peppers
10 chicken tenders – marinated for 30 min. in Ken’s Lite Caesar dressing then grilled

Ken’s Lite Caesar Dressing
Instructions
After cooking pasta (according to package
instructions), toss in dressing. Refrigerate until
serving.
If it’s necessary to grill the chicken for very
long before serving, it’s a good idea to cut up
and add a little chicken broth to keep it from
drying out. Seal tightly and refrigerate.
Microwave just to take the chill off before
serving.
At serving, mix greens and vegetables. Toss with
dressing. Add pasta and chicken. Sprinkle with
grated parmesan cheese.
(Additionally, you can sprinkle the chicken with
salt, pepper, onion, garlic and celery salt before
grilling.)
