Pound the chicken between layers of plastic
wrap. Season both sides of
chicken with salt and pepper and dredge in
flour shake off excess flour.
Heat oil in skillet and brown chicken until
done. Remove from pan. In oil
add capers then add broth, cook for 2 minutes
scrape the bottom of the
pan. Add lemon juice, water, butter and stir
until starts to thicken about 2
minutes then add the chicken and let simmer for
5 minutes until bubbly.
