     Mexican Soup

Ingredients
olive oil
1 teaspoon cumin
1 teaspoon oregano
2 cloves of garlic, crushed
4 cans chicken broth (about 8 cups)
2 large potatoes, diced
1 can garbanzo beans
2 chicken breasts, cooked and diced
1 can corn
 
a teaspoon salt
1 large zucchini, diced
1 cup fresh grape tomatoes, diced
cilantro
juice of 1 to 2 limes (or 2 to 3 limones)
sour cream (optional)
avacados (optional)

Instructions
Saute onion in olive oil. Add cumin, oregano, and garlic. Cook for a minute. Add chicken broth, potatoes, and garbanzo beans. Cook for 5 minutes (until potatoes are tender).
Add chicken, corn, salt, zucchini, tomatoes, cilantro, and lime juice. Cook until zucchini is to consistency of your liking.
Before serving, stir in a spoonful of sour cream and add avacados if desired.
