     Yam pecan salad

Ingredients
Yams/sweet potatoes - 2-3 medium
Pecan halves - 1/2 cup
Olive oil - 4 tbsp
Onion - 1 medium
Cumin powder - 1/4 tsp
Cinnamon powder - 1/4 tsp
Paprika - to taste
Salt - to taste
lime juice - 1 tbsp
 
cilantro - handful chopped

Instructions
Peel and cut the yams in to 1/4 inch slices. You can leave the peel on if you want, and use after scrubbing it well. Sprinkle salt and coat with oil on both sides (about 1 tbsp). Place the slices in a baking sheet and bake for around 20 min or until golden brown in 400F preheated oven, turning over midway
In a pan, heat 1 tbsp of oil. Add pecan pieces. Roast on low medium flame till crunchy and brown (careful not to burn). Remove and set aside.
In the pan, heat 2 tbsp oil Add 1 sliced onion and roast till brown. Add cumin powder, cinnamon powder and paprika/chilli powder and salt. Mix for a minute and take it off stove. Add 1 tbsp lime juice, roasted yam slices, pecan pieces and chopped cilantro. Toss gently till the yam slices are coated with the spice mixture. Rest it for half an hour or so before serving.
