     Sweet potato crust quiche

Ingredients
1 large sweet potato, peeled and sliced into thin rounds
3 C fresh spinach
1 bunch asparagus
salt
pepper
onion powder
5 eggs
1/2 C heavy cream
8 oz fontina cheese
 

Instructions
Preheat oven to 400. spray 9 inch round baking dish with cooking spray and arrange potato slices in thin, overlapping layers along the bottom and sides of the dish. season with salt and pepper and spray with cooking spray. bake for 15-20 minutes. Remove from oven and let cool. lower oven to 350
melt 1 tbl butter with minced garlic, add asparagus, season with salt pepper and onion powder add spinach and cook till wilted down. remove from heat and drain excess liquid. combine eggs and heavy cream. top crust with spinach mixture, then eggs and top with cheese. Bake uncovered 25 minutes or until set.
