Ingredients
5 lbs. pork loin, cubed
1 TBsp olive oil
2 medium onions, chopped
3 small cloves garlic, minced
16 oz (500 ml) box salsa pasillo
1 large can hominy
water
 

Instructions
In a large pot, heat oil. Saute pork, add onion, garlic, salt, pepper and enough water to cover the meat. Cover pot and cook over low heat until meat is tender. Add salsa pasillo and continue cooking for about 20 minutes. Add hominy and continue cookie another 15 minutes, stirring occasionally, over low heat. If too thick, add water for desired consistency.
