     Cowboy Caviar

Ingredients
1 can (15 oz) corn, drained
1 can (15 oz) black-eyed peas, drained & rinsed
2 jalapenos, seeded & minced
1 medium tomato, diced
3/4 cup red bell pepper, diced
1/2 cup red onion, diced
1/3 cup bottled Italian salad dressing
salt & pepper to taste
1 Tblsp. cilantro, minced
 
2 tsp. fresh lime juice

Instructions
1. Combine the corn, black-eyed peas, jalapenos, tomato, red bell pepper, onion & salad dressing in a large mixing bowl. Taste, & add salt/pepper as needed. 2. Cover the bowl with plastic wrap & refrigerate for at least one hour, allowing the flavors to meld. 3. Just before serving, add the cilantro & lime juice & toss again.
Serving Suggestions
Serve with tortilla chips; Refrigerate any leftovers.
