     Low Country Boil

Ingredients
3 tablespoons seafood seasoning (I prefer Old Bay)
3 quarts water
1 can or bottle (12 oz.) beer
2 bags frozen corn on the cob (2 inch pieces)
4 stalks celery – cut into 2-inch pieces
1 large onion – quartered
7 lbs quartered red potatoes
2 lbs smoked sausage – diced in 1 inch pieces
2 lbs shrimp in shells, thawed if frozen
 
2 lemons, cut in half
Salt and pepper to taste
Cocktail sauce, if desired

Instructions
Bring water, beer, Old Bay, onion, celery, corn and potatoes to a boil in a large pot for 15-18 minutes. Squeeze lemons over mixture and add lemon halves to the pot. Reduce heat to a low boil and add sausage and shrimp. Cover and cook for 8-10 minutes or until shrimp are pink.
Serving Suggestions
Drain if needed and serve on a large platter with cocktail sauce – no silverware needed!
