     Avocado Chicken Salad

1/2 ripe avocado
1 tbsp. green onions or chopped red onions
3 ounces cooked boneless, skinless chicken breast, sliced
Salt and pepper to taste
1 tbsp. Lime juice
2 tbsp. cilantro

Shred Chicken as you would pulled pork.
Mash avocado with a fork. Leave some of the Avocado chunky for more texture if you like. Add onion, lime juice, salt, pepper and cilantro. Fold in shredded chicken. Mix well.
I made this using 4 boneless chicken breasts which I roasted with a little EVOO and garlic and herb seasoning. I used 3 whole avocados. That made about 8 good size servings. I upped the other ingredients accordingly.
Serving Suggestions
Serve on a bed of lettuce or your favorite bread or rolls...
