     Skillet Blueberry Cobbler

Ingredients
1/4 c unsalted butter, melted
1 1/4 c sugar
1 c self rising flour
1 c whole milk
2 c fresh blueberries rinsed and patted dry
Vanilla bean ice cream for serving
 

Instructions
Place butter in 10 in cast iron skillet and put in oven while it preheats to 400
In medium bowl, whisk 1 c of sugar with flour and milk until smooth. Remove skillet from oven and swirl butter to evenly coat bottom and sides. Pour batter into skillet and sprinkle the blueberries evenly over top. Sprinkle with remaining 1/4 c sugar.
Bake until golden brown and bubbly, 45 min to 1 hr. Serve warm with ice cream.
