     Mexican Eggs

Ingredients
Cooking spray
Shredded cheese, any kind
2 small cans chopped green chilies, drained
Velveeta cheese
4 egg whites from a carton
1 Tablespoon flour
4 whole eggs, beaten with a fork
 

Instructions
-Spray a 9 inch glass pie plate with cooking spray.
-Cover the bottom of the plate with any kind of shredded cheese. Cover the shredded cheese with 2 small cans chopped green chilies, drained. Cover the chilies with a different kind of cheese sliced. Velveeta is good.
-Mix four egg whites from a carton with 1 Tablespoon flour. (the flour will not totally mix in.) Or do the same with four whole eggs beaten with a fork.
-Pour the egg mixture over the cheese layers. Microwave on power level 5 for 15 minutes uncovered. Let stand for 10 more minutes. Cut in wedges to serve.
