     Spicy Poblano Bolognese

Ingredients
1/2lb of ground beef
1 poblano pepper
2 cloves of garlic
1 medium onion
1 medium carrot
1 sprig of thyme
1 can of diced tomatoes
6oz of linguini or fettucine
2Tb of sour cream
 
1/4c of parmesan cheese
Salt
Pepper
EVOO

Instructions
Bring a large pot of salted water to a bowl. Core, seed and thinly slice poblano pepper. Mince or grate garlic. Dice onions and carrots.Strip thyme. Combine all three in a bowl.
Heat 1Tb of EVOO in tall sided pan over medium heat. Add beef and season with salt and pepper. cook until beef is browned. Set aside.
In same pan, using the beef fat, cook poblanos over medium high heat. Add another ts of EVOO if needed. Cook for 2 minutes or until slightly blistered. Add garlic and cook for about 30 seconds until fragrant. Set aside with ground beef. In same pan, heat another ts of EVOO. Add onions, carrots and thyme. Season with salt and pepper. Cook over medium heat for 5 minutes until softened. Add beef and poblanos. Add diced tomatoes. Let simmer for 10 minutes
Add pasta to boiling water. Cook until al dente. Drain but reserve about 1/2c of pasta water. Add pasta to pan, along with pasta water and sour cream. Toss and season with salt and pepper to taste. Sprinkle parmesan cheese on top and serve.
