1 oz. (about 1 c) dried chipotle chiles, stemmed, seeded and chopped
1 c olive oil
1/4 c raw, unsalted peanuts, walnuts or pine nuts
2 garlic cloves
1T sesame seeds
1 tsp. salt
1T brown sugar
2T white balsamic vinegar
Instructions
In skillet, add oil and bring to medium heat, but
do not heat to smoke point. Add garlic, chipotles
and peanuts and fry, stirring constantly for
several minutes, until garlic starts to become
golden.
Add sesame seeds and fry for one minute. Remove
from heat and cool slightly.
Transfer mixture to blender and add salt, sugar
and vinegar. Puree until smooth, for several
minutes. Serve warm or refrigerate in tightly
sealed container.

Suggestions
Used as condiment similar to a Mexican pesto. Great tossed with pasta or served over meats.
