     Spinach, ham and cheese bites

Ingredients
Short pastry (or from your left over pastry)
350g flour
175g butter
Pinch of salt
Cold water to mix
Filling-
About 6 spinach cubes, well drained and chopped
1 egg beaten
1 box 180g Philadelphia medium soft cheese (light)
 
2 tblspoon chopped parsley
Salt and pepper
Some shredded mozzarella or any cheese (used Alma 4 formaggi)
About 4-6 pieces chopped ham or bacon if you want

Instructions
Pastry- Mix flour and salt in a bowl, rub in butter. Mix with cold water to form a stiff paste. Turn dough on to a floured worktop and roll out. Grease a 12 patty tins and cut pastry in rounds. Place each one in the patty tins.
Filling and Method- Mix soft cheese, chopped parsley, chopped ham, salt and pepper, chopped spinach and the beaten egg. Mix everything well and fill each patty tin with the mixture. Sprinkle some shredded cheese or mozzarella on top. Enjoy! Very easy and delicious --) Bake on 200c for 25 minutes or till golden on top.
