In a skillet, saute peppers, garlic and Italian seasoning in oil until peppers are tender-crisp, about 5 minutes. Add tomatoes; cook for 1-2 minutes or until heated through. Sprinkle with croutons if desired.
I usually add a few onions with the green peppers.
1/2 cup serving (prepared without the croutons) equals 52 calories.
