     Yoghurt Cake

Ingredients
1 tub yoghurt of your choice
3 tubs self-raising flour
1 tub white sugar
1 tub vegetable oil
3 eggs
Grated rind of 1 lemon
1 tsp vanilla essence
Chocolate, sprinkles and sweets for decoration
 

Instructions
NB tub refers to yoghurt container – to be used to measure out all ingredients. Ideally, a 20cm Bundt cake pan should be used. 1. Preheat the oven 180 deg C/gas mark 4/160 deg C fan forced. Grease the pan. 2. In a large bowl, mix well the yoghurt, white sugar and oil. 3. Add the lemon rind and vanilla essence and mix well. 4. Sift the flour and mix with the mixture until smooth. 5. Pour into the pan, making sure the mixture is levelled and bake for 30-40 minutes or until skewer comes out clean. Let it cool for 10 minutes before turning onto wire rack. 6. Decorate with chocolate, sprinkles and sweets.
