     Vegetable Nachos

Ingredients
1/2 Cubed avocado
1/2 cup salsa
3 large corn tortillas cut in triangles & baked
1/2 cup queso fresco
1/2 cup shredded romain lettuce
3 oz black beans, drained and rinsed
1 lime
 

Instructions
Place tortilla triangles on a cookie sheet. Add beans, salsa and cheese and bake for 15 min. Remove from oven and speak lettuce and chopped avocados. Squeeze a little lime juice over nachos and serve.
Serving Suggestions
Seve as a snack or for Brunch
