In large mixing bowl, combine rice noodles, snap
peas, green beans, and cherry tomatoes. Set aside.
In blender, combine peanut butter, lime juice,
tamarind concentrate, chile paste/sauce, tamari,
coconut milk, sugar/syrup, ginger and granulated
garlic. Puree until fully combined and smooth.
Taste and add salt if desired.
Pour peanut sauce over noodle/vegetables and toss
to coat. Add cilantro, mint and chopped peanuts as
garnish to serve.
