Directions are for 1 potato, multiply as needed. Cut sweet
potato into 3 thick slices. Bake at 400 for 50 minutes flipping
once midway. Scoop out the insides, mash & mix w/ the rest of
the ingredients. Gently spoon mixture back into shells. (can
refrigerate for up to one day). Bake for an additional 20 minutes.
I topped mine with a few sun dried goji berries.
