1. Fry bacon until crispy. Drain all but 2 Tbsp. bacon grease. Remove bacon from the skillet, leaving grease.
2. Add cut Brussels sprouts and coat with bacon grease. Cook over medium heat for 3-5 minutes. Place Brussels sprouts on an aluminum foil sheet in a 9x13 pan. Place in pre-heated 400 degree oven and cook for 20-30 minutes, until the tops of the Brussels sprouts look roasted.
3. Remove from oven and immediately add the cooked bacon to the pan. Once the Brussels sprouts have cooled slightly and you are ready to serve, sprinkle pomegranate seeds on the Brussels sprouts. Yum!
