1 large bag spinach, cooked 3-5 min. in boiling water with salt, squeezed
1 large can corn
1 brick cream cheese
1 medias cremas can
700 grams queso chihuahua or mozzerella
Lasagna noodles, cooked
salt and pepper
Instructions
In a pan or pot, heat 3 Tbsp. oil and sauté onions till transparent. Add garlic and cook 2 more minutes, then add chiles with a Tbsp. butter. Cook 4 more minutes. Add the corn, the cooked spinach, and the chicken. Add the medias cremas and the cream cheese and heat for 5 more minutes.
Layer the lasagna noodles in a 9x13 pan. Cover with 1/3 of the mixture, then sprinkle cheese over top. Repeat the layers 2 more times, sprinkling lots of cheese on the top layer.
Bake at 350 degrees for 20 minutes or until heated through and cheese is melted.
