     Banana-Berry Oat Muffins

Ingredients
2 Bananas (Peeled & Mashed)
1/2 Cup of Dried Cranberries
1/2 Cup of Cooking Oats
1 Egg
1/4 Teaspoon of Salt
1/2 Teaspoon of Ground Cinnamon
1 3/4 Teaspoon of Baking Powder
1/4 Cup of Sugar
2/3 Cup of Whole Wheat Flour
 
3/4 Teaspoon of Vanilla Extract
1/2 Cup of Fat-Free Milk
2 Tablespoons of Olive Oil

Instructions
Preheat the oven to 375
Mixed the mashed bananas, the olive oil, egg, milk and vanilla extract in one bowl. Be sure to mix well. Set aside when done.
Lightly spoon the flour into a 2/3 measuring cup. Make sure that it exactly 2/3 cups. Add flour, oats, sugar, baking powder, ground cinnamon and salt into a different bowl than the banana mixture. Whisk them together.
Combine the flour and banana mixture into one bowl. Stir the contents until well mixed together. Once you have mixed them together mix in the cranberries. Spray your muffin cups with cooking spray or you can use oil if you do not have spray. Spoon about 1/3 cup of batter into each cup or until the batter is right below the brim. Bake in the oven for 16 minutes or until a wooden toothpick inserted in the middle comes out clean.
